How to Make a Super Simple Cucumber Salad
When there is shopping to do and laundry to finish, as well as a million other things to get done, it is simplicity in the kitchen that is the order of the day in our house. Fortunately, thanks to a lonely cucumber in my vegetable drawer, this super simple cucumber salad recipe came to my rescue.
I found this recipe on Pinterest, but I am going to be web-uncool and not credit it because when I clicked on the website for the recipe it was no where to be found. Not cool. Thank goodness they gave a brief description of the ingredients in the photo caption. But actual measurements, that was up to me. It could have turned out tragic. Fortunately, it didn’t.
The result of this cucumber salad is a really tasty, somewhat addicting and flavorful way to jazz up a bowl of cucumbers. I suppose you could use another acid instead of lemon juice, but I chose to stay pure to this flavor combo. I have made quite a few cucumber salads using vinegar before, and I intentionally did not want to recreate that pickled taste.
But if you are a vinegar-lover, go for it. You might also be able to active that lemon flavor by using a flavored oil, or just adding some lemon zest. The lemon definitely helps bring the cucumber to life, though.
I couldn’t eat this whole bowl in one sitting. I’m looking forward to the leftovers though, as they have now had time to marinate in the oil/lemon/spice mixture. I am sure they will be even better for the second serving.
Super Simple Cucumber Salad
1 cucumber, peeled and then cut into medium to thin slices.
2 tablespoons of olive oil
1 tablespoon of lemon juice
Half a teaspoon of chili power
Salt and Pepper to taste
1. Wisk together the olive oil, lemon juice, pour over the cucumbers.
2. Sprinkle chili powder, salt and pepper on top of cucumbers.
3. Toss to combine.
